Q: Norma asks, "I saw in the culinary class about the lemon chess pie----I am unable to attend the classes on those dates , so I was needing to know, where on park is the pie served? and can the recipe for the pie be found somewhere also?"

A:I'm so sorry for the delay in answering your question!  Unfortunately, Lemon Chess Pie is not being served on park this year. However, Debbie Dance Uhrig, Master Craftsman of Culinary & Crafts at the school has shared the recipe.  Enjoy!

3 cups sugar

3 tablespoons cornmeal

2 tablespoons flour

6 eggs, unbeaten (at first)

3/8 cup melted butter, (1/4th plus 1/8th)

3/8 cup milk

3/8 cup lemon juice

3-4 tablespoons grated lemon peel

One unbaked pastry shell, 9 inch

 

In a mixing bowl combine the sugar, cornmeal, and flour; mix with a whisk to blend.  Add the eggs, lightly blending after each addition.  Stir in the melted butter, milk, lemon juice, and peel.  Blend well.  Pour the mixture into the unbaked pie crust.  Bake the pie at 350 degrees for 45 minutes, or until the knife inserted in the middle comes out clean.
